As the name implies, this delicious sandwich is made with Vermont products and ingredients, and it can be served for breakfast, lunch or dinner. Basically, it is a grilled cheese/French toast sandwich with apples and shallots and ham, bacon or sausage.

  • 4 slices of your local favorite bread, sliced thin/sandwich style
  • 2 cups sharp cheddar, grated
  • 6 eggs, beaten
  • 2 cups half-and-half
  • 4 tablespoons vanilla extract
  • 1 Granny Smith or apple variety of choice, sliced
  • 1 whole shallot or small onion, julienned
  • 1 cooked sausage patty or thick slice of ham
  • 3 or 4 tablespoons unsalted butter, for frying
  1. Make the French toast batter by mixing the eggs, half-and-half and vanilla in a medium-sized bowl.
  2. In a small skillet or sauté pan over medium-high heat, melt 1 to 2 tablespoons of butter until bubbling. Add the sliced apples and shallots and cook until they start to soften. When they are done, remove from heat and set aside.
  3. Melt 1 to 2 tablespoons butter in a skillet or griddle until it starts to bubble, but don’t let it start to brown.
  4. Soak the bread in the batter until well-saturated. Place the soaked bread in the skillet or on the griddle and cook on one side for 2 to 3 minutes, then turn to cook the other side.
  5. At this point and in this order, add the cheese, the sausage or ham and the apples and onions to one slice and place the other slice on top. Let cook for another minute or two and then, very carefully using a spatula, flip the sandwich over and cook for another minute or two or until both sides are golden brown and the cheese has started to melt.

Makes two big, delicious “sandwiches” that you’ll need a knife and fork for. Enjoy and Go Outside!
