This is one of my favorite summertime recipes. It’s refreshing and delicious and is great as is or on or along with just about anything and especially grilled foods.

- 1 medium cucumber, chopped (about 1 ½ cups)
- 1 medium tomato, chopped (about 1 cups)
- ½ small red onion, peeled and chopped (about ½ cup)
- ¼ minced fresh parsley
- ½ cup white vinegar
- 2 tablespoons sugar
- 1 cup water
- Put all the ingredients in a bowl and stir. You may want to add more water or sugar to taste. You can eat right away or refrigerate until well chilled. It last several days in the refrigerator and packs well for outdoor adventures.

Yield: about 4 servings
Prep time: 10 to 15 minutes
