Pancake Roll Ups

This is an idea more than a recipe, but it’s an idea that you are going to want to make over and over. It started out by using leftover pancakes but quickly became the reason I made pancakes. Any pancake recipe will work for this, even the quick, box ones. My favorite is to make banana pancakes and spread on peanut butter before rolling up, but there is no limit to all the goodness you can use. 

Ingredients:

(These are just a few ideas and favorites, but the possibilities are limitless!)

  • Blueberry and banana
  • BLT
  • Ham and cheese
  • Nutella
  • Peach and jam
  • Peanut butter and jelly
  • Strawberries and whipped cream
  • Walnuts and apples

Directions:

  1. Make your pancakes and, once they are done, top them with your filling of choice.
  2. Roll up your pancakes, and you are ready to go! I either wrap the roll-ups in aluminum foil or put them in a resealable plastic bag, then I put them in the boat cooler for fishing or my backpack for hiking. They are filling and delicious even when cool.
    Roll up and enjoy!

Yield: As many roll-ups as you have pancakes
Prep time: 5 to 10 minutes
Cook time: 5 minutes
