Pancake Roll Ups
This is an idea more than a recipe, but it’s an idea that you are going to want to make over and over. It started out by using leftover pancakes but quickly became the reason I made pancakes. Any pancake recipe will work for this, even the quick, box ones. My favorite is to make banana pancakes and spread on peanut butter before rolling up, but there is no limit to all the goodness you can use.
Hey, everybody Jimmy Kennedy here with Go Out{side} in the Skeeter getting ready to head out on Lake Champlain and had a bunch of pancakes left over from a sleepover my daughter June had the other day. And this is something that I used to do at the restaurant a lot, too. I would take a leftover pancake sometimes I would just make extra and these are cold and just took them out of the cooler.
And I would make what we call a roll-up. And everybody used to make fun of me. They call them Jimmy roll-ups, but I would do banana pancakes and I would put peanut butter in there. Now we just roll them up to make them like a real roll-up. I would put them in aluminum foil, and take them fishing with me.
I would go fishing almost every day after work and that’s what I took with me. And they’re super healthy, they’re filling. They got lots of protein and they just taste so good. I love these things and I’m still making them all the time. I always save the pancakes and the bananas and peanut butter are probably my favorite, but June likes Nutella in hers and she’ll put all kinds of different fruit in there, peaches, and we got some apple jam.
And then the peanut butter and jelly is always good, too. That’s my second favorite of peanut butter. and jelly, or bananas with peanut butter. They’re delicious. Just a super simple way to make a snack on the go. And these are also great for hiking. We’ve been on a few winter hikes or ice fishing. You just roll them up, I’ll show you what we got.
And usually, I’ll put the bananas right in the pancakes and cook them like that. Just get a good slather of peanut butter. And like a lot of our recipes you can use it. Absolutely. And you can even do ham and cheese in this thing if you wanted to. We like all these versatile recipes. It makes it so much easier and then just slices up on one side so you can roll it.
And these are gluten-free pancakes, so they’re not quite as rollable as your regular pancakes. And I have even been out eating breakfast with a family and somebody didn’t eat their pancakes and I saved them. I take them home just for this reason, to make.. to make some road snacks. And this is more of an idea than a recipe, obviously, but it’s a good idea and it really does work and is so incredibly tasty.
Let’s see if I can get this gluten-free stuff to roll. Not too bad it’s going to crack a little, but that’s all right. If it’s too big, we can just cut them. But usually, these are a little more elastic, but this doesn’t have the flour structure. And so these things are so good. I’m going to eat this right now, I’m pretty sure.
Again, peanut butter and jelly, bananas and peanut butter. Nutella, peaches, anything you want. Ham and cheese. Pancake Roll-Ups. Enjoy them. Make these. They’re good. Take care, folks.
Ingredients:

- Blueberry and banana
- BLT
- Ham and cheese
- Nutella
- Peach and jam
- Peanut butter and jelly
- Strawberries and whipped cream
- Walnuts and apples
Directions:
- Make your pancakes and, once they are done, top them with your filling of choice.
- Roll up your pancakes, and you are ready to go! I either wrap the roll-ups in aluminum foil or put them in a resealable plastic bag, then I put them in the boat cooler for fishing or my backpack for hiking. They are filling and delicious even when cool.
