You will have plenty of leftover pimento cheese, but that’s always a good thing.

4 cups Cabot Shredded Cheddar, Seriously Sharp or Extra Sharp

1 cup mayo, or 1/2 cup mayo and 1/2 cup Cabot Greek Yogurt

4-ounce jar of diced pimentos, drained

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon sugar

Mix all the ingredients in a large bowl until fairly well-blended.
