Healthy Fruit Salad With Mint

There’s nothing quite like a cool, fresh fruit salad on a hot summer day. Once again, use any fruit you and your family enjoy, but cherries, peaches, plums and blueberries are hard to beat with the addition of mint, citrus and vanilla. This is another supereasy recipe that I think you’ll end up making often. The only tip here is to use the freshest fruit you can find.

Ingredients

6 to 8 cherries, pitted and halved
1 peach, pitted and cut into bite-size pieces
2 plums, pitted and cut into bite-size pieces
Handful of blueberries
2 teaspoons sugar
2 teaspoons or so mint, minced
2 teaspoons fresh lime or lemon juice
Splash of vanilla extract

Directions

  1. Mix and mash the mint and sugar in a bowl with a wooden spoon or spatula.
  2. In another bowl, place all of the fruit you are using. Add the mint and sugar mixture to the fruit and gently toss.
  3. Now add the lime or lemon juice and toss again. You can enjoy right away or let sit for 15 to 20 minutes so that the juices from the fruit and the sugar come together a little.

Yield: 3 or 4 medium-size bowls

Cook time: 15 minutes
