I originally made this recipe for a hiking treat, but they are so good and easy that I’ve started making them as snacks for hunting, fishing, boating and just to have around the house. I like to bake them in a mini-muffin tin, but you can make them any size or shape you wish.

2 cups old-fashioned 5-minute oats

1/2 cup Cabot Lowfat Greek Yogurt or Cabot Lowfat Vanilla Bean Greek Yogurt

1/2 cup unsweetened applesauce

1/2 cup sliced almonds

1 cup (4 scoops) Cabot Whey Protein powder

1/2 cup dried raisins or cranberries

1/2 cup brown sugar or brown sugar blend, packed

1 teaspoon ground cinnamon

1 teaspoon ground ginger

Cooking spray

  1. Preheat oven to 400°F.
  2. Combine all ingredients in a large bowl and beat with an electric mixer on low speed for 1 minute or with a spoon until well-blended. Set aside.
  3. Line two (12-hole) mini-muffin pans with paper liners. Scoop 2 tablespoons of granola mixture into each cup.
  4. Bake on middle oven rack for 12 to 15 minutes. Serve warm or at room temperature.
