Of all the recipes that we say are “simple, quick and easy,” this may be at the top of that category. Cheese toast is something that many of us grew up eating when we needed a quick after-school snack, served for lunch or dinner with a big bowl of tomato soup or as a favorite around the campfire on family camping trips. Chances are you have your own memories of this simple, cheesy snack, and there’s no reason we can’t keep making them, especially when they taste this good!

Ingredients:

  • 2 slices of your favorite bread
  • 1 cup of your favorite cheese or blend of cheeses, shredded
  • Butter (optional)
  • Mayonnaise (optional)
  • Mustard (optional)
  • Salt (optional)
  • Pepper (optional)

There are many ways to make cheese toast over an open fire at your campsite. The basic idea is to simply melt cheese on one side of toasted bread. The only thing to make sure of is that you toast or broil both sides of the bread before adding the cheese. You can add butter or any of your favorite condiments to the cheese side of the bread before adding the cheese. My personal favorite is Dijon mustard, but you can go straight up or spread or sprinkle whatever you like and enjoy!

I’ve found that using a cast-iron pan with a lid is easiest for campfire cooking. I’ll melt a little butter in the pan and quickly “toast” the bread on both sides. Add a little mustard, then the shredded cheese. Cover with a lid or aluminum foil, and the cheese will melt within a matter of a few minutes. Using a spatula, transfer the cheese toast to a plate or napkin and you’re good to go.
