Campsite Blueberry Pancakes With The Hunts
You must try these campsite pancakes. Super easy to follow recipe and your kids can get in on the cooking action!
Blueberry Lemon Pancakes
Ingredients:
Before you leave
1.5 cups of All Purpose Flower
1 teaspoon of salt
3.5 teaspoons of Baking powder
At the campsite:
3 Tablespoons of butter
Lemon juice from 1-2 Lemons (about 1/4 cup)
1.5 cups of milk
1 egg
1 cup of blueberries (more if desired)
Cooking Oil for pan/griddle
Instructions: (with time stamps)
1: (0:12) Before your trip, combine the flour, baking powder, and salt at home in a plastic bag
2:(0:47) add the lemon juice to the milk and stir. Let it sit for at least two minutes
3:(1:35) Melt butter in a pan
4: (1:45) Add milk mixture to melted butter.
5: (1:55) whisk an egg into the mixture
6: (2:08) Combine the flour mixture to the bowl and whisk until smooth
7: (2:34) Add blueberries and stir them into the batter
8: (2:47) Put batter in oiled hot pan. Flip when the bubbles pop but don’t fill in with batter

- Add blueberries and stir into the batter.
- Pour batter onto an oiled hot pan. Flip when the bubbles pop but don’t fill in with the batter
